Harissa Roast Chicken

Recipe serves 4-6

Ingredients:

- 1 whole chicken

- 50g harissa paste

- 1 lemon, sliced

- To serve: chopped spring onions, coriander, and a squeeze of lemon

Instructions:

- Pat your chicken dry and sprinkle generously with salt. Place on a wire rack above a baking tray in the fridge and leave for 2-6 hours.

- Remove the chicken from the fridge half an hour before ready to cook. Preheat the oven to 190C. Spatchcock the chicken and rub generously with harissa. Place lemon slices below the skin. Season with more salt and pepper, and drizzle with olive oil.

- Place the chicken on a wire rack above a baking tray and place into the oven for 30-45 minutes or until an internal temperature of 165C is reached.

- Garnish with spring onions, coriander, and an extra squeeze of lemon.
