Pumpkin Hummus

Recipe serves 4

Ingredients:

- 1 tin chickpeas, drained

- 3 ice cubes

- 300ml tahini

- Juice of 1/2 lemon

- 1 cup roasted pumpkin

- To finish: roasted pumpkin, roasted chickpeas, crispy quinoa, cranberries

Instructions:

- Bring a pot of water to a boil and pour in your chickpeas. Boil for 20-30 minutes, then drain and remove the chickpea skins, keeping 2 tbsp chickpea water. This step isn’t mandatory but makes creamy dreamy hummus!

- Add the chickpeas to a food processor with garlic, tahini, roasted pumpkin, chickpea water and lemon juice. Season with salt and pepper. Blend up until smooth. Add in your ice cubes and blend again. Season to taste.

- Serve roasted pumpkin, roasted chickpeas, crispy quinoa, cranberries, and a generous drizzle of olive oil.
