Sesame Tuna Avocado Salad

Recipe serves 4

Ingredients:

For the dressing:

- 1 tbsp apple cider vinegar

- 1 tbsp sesame oil

- 2 tbsp soy sauce

- 2 tsp maple syrup

- 4 tbsp tahini

For the salad:

- 200g salad (or shred your own - crunchy salad such as carrots, cabbage or baby gem work well)

- 25g cilantro, roughly chopped

- 1 250g tin sweetcorn, drained

- 1/2 cup toasted almond flakes

- 3 tbsp sesame seeds

- 1 avocado, diced

- 4 spring onions, sliced

- 2 eggs, boiled and quartered

- 2 150g tins tuna, drained

- To serve: additional spring onions and sesame seeds

Instructions:

- Mix all the ingredients for the dressing together, adding in cold water and whisking until smooth. Season with salt and pepper to taste.

- Toss your salad leaves with the dressing, then add in the corn, cilantro, sesame seeds, spring onions, avocado, almonds and tuna, tossing to combine. Serve topped with your eggs and garnish with spring onions and sesame seeds.
