Short Ribs

Recipe makes 5 short ribs (serves 3)

Ingredients:

- 5 short ribs

- 500g soffritto mix (or 1 onion, 1 carrot, 1 celery, diced)

- 4 shallots, sliced

- 7 cloves garlic, smashed

- 1 1/2 tbsp tomato paste

- 3/4 cup red wine

- 5 sprigs thyme

- 4 sprigs rosemary

- 2 bay leaves

- 500g chicken stock

- To serve: chives

Instructions:

- Heat oil in a pot on high heat. Season short ribs with salt, and sear until browned. Remove and set aside.

- Add the soffritto, shallots and garlic to the same pot with additional oil and let soften. When starting to brown, add in the tomato paste and cook until darkened.

- Add in the red wine and let reduce slightly before adding the short ribs to the pot. Add chicken stock and add water until the short ribs are covered.

- Bring to a simmer, and add in the rosemary, thyme and bay leaves. Cover and let simmer for 4 hours or until tender.

- Remove the meat and set aside. Pass the sauce through a strainer and return the sauce to the pot. Let reduce until thick and glossy. Season with salt and pepper to taste. Add the short ribs back in and baste.

- When ready to serve, remove the bone from the short ribs and top with the sauce and chives.
