Avocado Mango Salsa

Recipe serves 4-6

Ingredients:

- 2 avocado, cut into cubes  

- 1 mango, diced

- 1 pack cherry tomatoes, quartered 

- 2 cucumbers, cubed 

- 1 tbsp cumin 

- 1 can corn, drained

- 25g coriander, chopped

- 1/2 cup almonds, roughly chopped

- Juice of 1-2 limes

- To serve: tortilla/pita chips

Instructions:

- Toss the cherry tomatoes, cucumber, avocado, mango, coriander, almonds, and corn together in a bowl

- Season to taste with salt, pepper, cumin, and a good drizzle of olive oil

- Serve with a protein of your liking or chips
