Green Goddess Salad

Recipe serves 4

Ingredients:

- 4 heads baby gem, chopped

- 6-8 stalks baby corn, sliced and steamed

- 1 cup roasted chickpeas

- 1 cucumber, sliced

For the dressing:

- 150g Greek yogurt

- 5g each: dill, parsley, mint, coriander

- 2 tsp capers

- 2 tbsp lemon juice

Instructions:

- Blend all the ingredients for the dressing together, and season with salt and pepper to taste

- Toss your salad ingredients together with the dressing before serving
