Sesame Chicken Salad

Recipe serves 4

Ingredients:

- 2 chicken breasts, pan fried and shredded

- 2 baby gem lettuce, chopped

- 1/4 head red cabbage, chopped

- 1/4 head white cabbage, chopped

- 1 bunch fresh coriander, chopped

- 4 sprigs spring onions, sliced

- 1 carrot, julienned

- 2 tbsp white sesame seeds

- 2 tbsp fried onions

- 1/2 cup chopped almonds

For the dressing:

- 3 tbsp tahini

- 1 tbsp sesame oil

- 2 tsp honey

- 1 tbsp rice vinegar or lemon juice

- 2 tbsp soy sauce

- Salt and pepper

- Water

Instructions:

- Whisk all the ingredients together for the dressing and season with salt and pepper to taste. Add water and whisk until emulsified and a runny consistency is formed.

- Add the salad ingredients to a bowl and drizzle over all the dressing. Toss well and season to taste.

- Serve topped with roasted almonds, sesame seeds, spring onions, coriander, and an additional drizzle of sesame oil.
