Miso Cod

Recipe serves 4

Ingredients:

- 8 pieces cod

For the marinade:

- 2 tbsp miso

- 1/4 cup mirin

- 1/4 cup sake

- 1 tbsp honey

- To serve: Flaky salt and lemon juice

Instructions:

- Whisk the ingredients for the marinade together.

- Pat your fish dry. Place in a container and pour over the marinade. Cover and let marinate in the fridge for 2 hours up to 24 hours.

- Preheat the oven to 200C. Line a baking tray with baking paper and place the fish on the tray skin side up, leaving ample space between.

- Bake for 20 minutes or until the fish is golden brown and caramelised.

- Serve with a sprinkle of flaky salt and a squeeze of lemon.
