Sesame Noodle Salad

Recipe serves 4

Ingredients:

- 200g noodles (soba or edamame noodles work well)

- 300g mixed salad leaves

- 1 pack cherry tomatoes, quartered

- Handful of spring onions, sliced

- 20g coriander, roughly chopped

- 1/2 cup roasted almonds

- 1 tbsp black sesame seeds

- 1 tbsp white sesame seeds

For the dressing:

- 3 tbsp sesame oil

- 3 tbsp soy sauce

- 1 tbsp miso

- 1 tbsp lemon juice/yuzu

- 1 tbsp rice vinegar

- 1/2 tbsp honey

Instructions:

- Cook your noodles according to package instructions. Drain and rinse under cold water to stop the cooking process. Place in a bowl.

- Whisk your ingredients for the dressing together, seasoning with salt and pepper if needed. Pour over the noodles and toss to combine.

- Add in the salad leaves, cherry tomatoes, coriander, sesame seeds, and spring onions. Toss to combine. Season with more dressing if needed.

- Garnish with the almonds and more coriander and spring onions.
